Birthday Party Food - Mexican Fiesta with Fresh Guacamole and Salsa

Mexican Fiesta with Fresh Guacamole and Salsa
When planning a spring or summer birthday party, consider a fun Mexican-inspired celebration. Grab a pinata, fill it with sweets, and make up several large platters for a taco and nacho buffet. With some advanced preparation, the kids will love these familiar foods, and may be enticed to try something new!
Of course you'll want tortillas, sour cream, a variety of shredded cheeses, refried bean paste, and seasoned, crumbled ground beef. Add in home-made guacamole and salsa and you have a fiesta!

To make mild salsa that kids will eat right up, you will need:

1 1/2 large red tomatoes, peeled and seeded
1/2 a sweet red onion, chopped fine
1/2 a green pepper, minced
2 1/2 tablespoons of extra-virgin olive oil
2 tablespoons of cilantro
a dash of chili seasoning
a small sprinkle of cayenne pepper (optional)

Throw all of the ingredients into a blender and run it on high for about two minutes. If it is still too sharp for kids' palates, add in half of a teaspoon of sugar. Serve it with a platter of chips, and be sure to leave another bowl of it with the nacho and taco fixings. Delicious!

Commercially-jarred guacamole is far too salty for most kids to stomach. Home-made, however, is sure to be a crowd favorite. This recipe also works well for adults worried about hypertension.

For fresh guacamole with no salt added, you will need:

1 avocado
1/4 of a sweet onion
2 cloves of garlic
half of a red Roma tomato
A few sprigs of fresh cilantro
A dash of pepper
lime juice to taste

Slice the avocado length-wise, exposing the pit. To remove the pit, tap the knife into it and twist. Place it in a bowl and mash it with a fork. Dice the tomato, but do not remove the wet flesh from the inside or the guacamole will be too dry. Add them into the mix, as well as the diced onion and pepper. Crush the garlic in a press and mince the cilantro. Mix them in and stir vigorously. Add lime juice sparingly. This will taste outstanding on nachos, tacos, or alone as a dip!
